What’s Cookin’

I’ve been owing several of you many recipes and no time to blog them.

So! Here they are. Try them. Hope you love them like we did!

Bacon Cheddar Mashed Potatos

2 1/2 lbs. cubed peeled baking potato
1 cup (4oz) shredded extrasharp Cheddar cheese
1 cup 2% reduced fat milk
1/2 cup chopped green onions
2 tablespoons reduced fat sour cream
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 bacon slices, cooked and crumbled

Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender. Drain and return potato to pan. add cheese and milk; mash to desired consistency. Cook 2 min. or until thoroughly heated, stirring constantly. Stir in onions and remaining ingredients. (makes 8 servings) (Cooking Light Cookbook)

Grilled Sirloin Skewers with Peaches & Peppers
Kebabs:
1 1/2 tablespoons ground cumin
1 1/2 tablespoons cracked black pepper
2 3/4 teaspoons kosher salt
2 lbs. boneless sirloin steak, cut into 48 (1 in.) pieces
4 peaches, each cut into 8 wedges
2 small red onions, each cut into 8 wedges
2 large red bell peppers, each cut into 8 (1 in.) pieces
cooking spray

Sauce:
1/2 cup chopped fresh parsley
1/4 cup red wine vinegar
1 teaspoon olive oil
1/4 teaspoon kosher salt
1/4 teaspoon cracked black pepper
3 garlic cloves, minced

Parsley Spings (optional)

Prepare grill. To prepare kebabs, combine first 7 ingredients, and toss well. Thread 3 steak pieces, 2 peach wedges, 1 onion wedge, and 1 bell pepper piece alternately onto each of 16 (12 in.) skewers. Place on grill rack coated with cooking spray, and grill 6 minutes or until tender, turning occassionally. Place on a platter, and cover loosely with foil. Let stand 5 minutes. To prepare sauce, combine chopped parsley and next 5 ingredients, stirring with a whisk. Spoon over kebabs. Garnish with parsley sprigs, if desired. (Cooking Light Cookbook)

New Saturday Morning Fave!!

Leek, potato & Gruyere frittata

3 Tbs. unsalted butter

6 oz. small red potatoes, sliced 1/8″ thick

salt and freshly ground pepper, to taste
2 leeks, white and lightly green portions, rinsed well and thinly sliced

5 eggs

3 Tbs. heavy cream
2 oz. Gruyere cheese, shredded

1 Tbs. finely chopped fresh flat-leaf parsley

In deep half of small frittata pan over med-high heat (i just used a small skillet), melt 1 Tbs. butter. Add potatoes, salt & pepper. Cover with shallow pan; cook flipping potatos occassionally about 8 min. Transfer to bowl.

In deep half of small frittata pan over med.-high heat, metl 1 Tbs. butter. Add leeks, salt and pepper. Cook, stirring occassionally, 6-8 min. Transfer to separate bowl.

In another bowl, whisk eggs and cream. Stir in cheese, parsley, potatoes, salt, pepper and all but 2 Tbs. leeks. Set deep half of small frittata pan over medium heat; melt 1/2 Tbs. butter. Add egg mixture; cook until just beginning to set, about 4 min.; using rubber spatula to lift cooked edges and allow uncooked eggs to flow underneath.

In shallow half of small frittata pan over medium heat, melt 1/2 Tbs. butter. Place shallow pan upside down on top of deep pan; flip frittata into shallow pan. Cook, covered, 4 minutes. Remove deep pan; cook until eggs are set, 2-3 minutes. Skake pan to loosen frittata; slide onto plate. Garnish with reserved leeks.  Serves 4-6. (william sonoma kitchen)

Preslyn’s 1st sink bath. She had salad dressing coated in her hair.
Hummus Sammy
3Tbs. low fat mayonnaise
2 tsp. chopped kalamata olives
2 tsp. finely chopped scallions (green onions)
5 Tbs. hummus
4 slices pita bread
6 cucumber slices
2 tomato slices
2 Tbs. Shredded carrots
2 pieces romaine lettuce

Pitted olives, cherry tomatoes, cucumber for garnish

Mix together the mayonnaise, olives, scallions, and a pinch of black pepper in a small bowl and set aside. Spread hummus on two slices of pita bread and the mayonnaise mixture on the other two. Layer the cucumber, tomatoes, carrots, and lettuce on top of the hummus. Top each hummus slice with a mayonnaise one. Cut in half. Skewer together the olives, tomatoes and cucumber with a toothpick and serve on the side. makes 2 sandwhiches ( I doubled the recipe to make enough for all of us.) Perfect Sunday lunch!

I served it with
5 Cup Salad
1 11oz. can mandarine oranges, drained
1 8 1/2 oz. can pineapple chunks, drained

1 cup coconut

1 cup tiny marshmellows
1 cup sour cream
Combine, cover and chill several hours or overnight. Add marashino cherries and/or pecans if desired.

Here’s to Love

Today marks the 57th wedding anniversary of my grandparents. I am so honored to come from a family that both sides (my mom and dad’s parents) are all still married. This post applies to all of them, though it is in celebration of one set in particular.

What a heritage they have established for the rest of us. These two are simply amazing. Since I’ve only ever known them together, I know no different, but honestly I can’t imagine either one of them without the other. They truly found their soulmate when they found one another. They have raised up a crazy bunch, for sure. But though we may not all agree eye to eye and we may not all keep in touch as often as we’d like, we are Family and our love for one another outlasts distance and views and obstacles. I am so blessed to be raised in a family that loves each other and supports each other.

As a child I watched their love through my child eyes. Always being a partner to one another and living life together. But as a child you see love in a different way. As I’ve grown I’ve seen love through them, like I never knew before. It challenged me to find that same love. Someone to truly make a LIFE with, and never consider anything less.  A love that runs so deep, that you know without a shadow of a doubt that nothing could ever tear it apart. A love that through hardships, grows into something so powerful and obvious. 

Our family gatherings are far from formal, quiet events. Instead growing louder with each year as we add a new love or a new child. But the laughter, sometimes to the point of tears, that echoes through the room is from years of fond moments that we all share. And as each meal begins with a simple prayer, that most of us never make it through without tears, its because we are so thankful for the family that God has given us. 

My grandparents have started something that I  pray will never die off or  that we will all not get too busy to continue. When their paths crossed, some 57 years ago, the ripple from that day continues to grow. They were made for one another. They are two peas in a pod. And I hope that at the end of my life I can look over to the recliner beside me and see my love of many years and have continued the heritage they have started for me.

Laundry brings it all back to reality

We are quickly approaching the big months of birthdays galore. The months where all of the sudden all three of my children jump up another whole year. We’ve been talking about birthdays for a few weeks now and Hayden is very excited and is very in on the party planning this year. She has her own ideas and plans, and they are ever changing.

Last night after all were tucked in, a sat on the floor surrounded by my five full laundry hampers of clean clothes that had piled up. I thought I’d pop in a DVD of ER (still stuck in the first season!) and try to finish the disc I was currently on. I started watching and folding and as my piles were getting larger for distribution( mine, bj’s, the twins, and hayden) I cam across a nightgown I had bought for Hayden for her first birthday. Out of habit I reached to place it on top of Hayden’s pile (even though in my head I know the Preslyn has been wearing this one for months) and it caught me by surprise and I realized, wait no, wrong pile…and moved over to the right one. I started remembering how it was so long on Hayden the first time she wore it and now here Preslyn is wearing it and it isn’t even long on her. Meaning she will soon outgrow it.

Suddenly out of nowhere a wave of sentimental emotions hit me and I just felt sad that my little wee little babies (and yes I realize i just used little twice, but people, if you didn’t see them when they were born they were itty bitty) were growing up and were about to be 2 which means they really aren’t babies anymore. And here is Hayden in her last year of being a little girl before the big FIVE! I just want to wrangle them all in and hold them like babies for forever. I want their little nightgowns to touch their toes because they are still tiny. I just want life to slow down just a little so that mamma can savor these moments that are fleeting even longer than I am already trying to do.

So much for an accomplishing night of ER and chores….made me wish I would have jsut left the piles to sit a little longer instead of realize that my babies will soon all not be babies anymore.

These people need our prayers! I know that when we were going through everything with the girls people from far and wide were flooding the gates of heaven with their prayers. Now its our turn to do that for someone else.

Baked Honey Mustard Chicken Salad

Just made this for dinner and it is delicious. Perfect and light but filling and yummy!

INGREDIENTS

  • 6 skinless, boneless chicken breast halves
  • salt and pepper to taste
  • 1/2 cup honey
  • 1/2 cup prepared mustard
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried parsley

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9×13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
  3. Cover with foil (this helps the chicken stay moist and not dry out) Bake in the preheated oven for 30 minutes. Remove foil and turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving.

I made a salad out of the chicken. Served it on top of mixed italian baby greens, mandarin oranges, dried cranberries, toasted pecans & walnuts (Salad Toppers), crumbed basil & tomato feta, and honey mustard viniagrette (ken’s brand light–the spray kind).

Served it with a back of uncle ben’s butter and garlic rice and some pumpernickle bread. SO good and the whole family enjoyed it.
