Sweet Tea Remedy

If any of you are a sweet tea-a-holic like me, I’m talking have a little tea with your sugar, drinker and are looking for a healthier alternative let me just let you in on my new favorite way to drink tea minus the sugar (GASP!) My bff’s dad introduced me to it and I just love it 🙂 All it takes is one family size tea bag (makes a gallon) with two Earl Grey tea bags and wahlah! Its fabulous and has a delicious flavor!

Can’t decide on dinner???

Let me help you out then. Today for lunch I decided to try Elaine’s recommended recipe for Taco Soup. The ingredients alone made my mouth start watering, but as the soup heated up on the stove Hayden kept coming in saying, ” Mommy that smells delicious. ” poor girl had a really hard time waiting for it to cook.

THIS IS DELICIOUS!!! I was not disappointed whatsoever, and it is really easy to make. I added some cornbread on the side and wa-la, a yummy cold-weather meal in about 30 minutes! Can’t beat that!

It does make a lot so invite some friends over to share it with you 🙂

Get Cookin’

Here is a scrumptious meal for you to make…I made it last night and my family LOVED it! Its from my new Cooking Light cookbook and so it is healthy AND yummy! Can’t beat that!

Chicken Fracais

Prep:20 min. Cook:23 min.

3/4 cup egg substitue
1/4 cup (1 oz.) grated fresh Parmesan Cheese
1/4 cup chopped fresh parsley
1/4 cup dry white wine
2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon hot pepper sauce
3 garlic cloves, minced
8 (6oz.) skinless, boneless chicken breast halves (i used the tenderloins)
1/4 cup all purpose flour
1 tablespoon olive oil
Cooking spray
2 tablespoons butter (I use smart balance)
1/4 cup dry white wine
3 tablespoons fresh lemon juice

1. Combine first 8 ingredients in a dish
2. Place each chicken breats half in a zip lock bag and pound to 1/4 inch thickness. Discard bag. Dredge chicken in flour, and dip in egg substitute mixture.
3.Heat 1 1/2 tablespoons oil in a large nonstick skilllet coated in cooking spray over medium heat. Add 4 chicken breast halves; cook 4 minutes on each side or until done. Remove from pan, and keep warm. Wipe drippings from pan with paper towel. Repeat with 1 1/2 teaspoons olive oil and remaining chicken halves.
4. Melt butter in pan; add 1/4 cup wine and 3 tablespoons lemon juice. Bring to boil; cook 10 seconds. Serve immediately over chicken.

Yield: 8 servings

Oven roasted green beans
Prep:12 min. Cook 10 min.

1lb. green beans, trimmed
2 teaspoons olive oil
1/2 teaspoon salt
1/8 teaspoon coarsley ground black peppter
cooking spray
2 teaspoons fresh lemon juice

1. preheat oven to 475 degrees
2.combine beans and next 3 ingredients in a large bowl, tossing well to coat. Arrange in a single layer on a baking sheet coated with cooking spray. Bake at 475 for 10 min. or until tender, turning once.
3. Remove from oven, add lemon juice to beans, and toss.

Yield: 4 servings

Creamy Parmesan Orzo

Prep:6 min. Cook 23min.

1 tablespoon butter
1 cup uncooked orzo (rice-shaped pasta)
1 1/4 cups fat-free, less sodium chicken broth
1 1/4 cups water
1/4 cup (1oz) grated frsh paremsan cheese
2 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 teaspoons pine nuts, toasted

1. Heat butter in a medium saucepan over medium heat. Add orzo, and cook 3 minutes, stirring constantly. Stir in broth and water; bring to a boil. Reduce heat; simmer until liquid is absorbed and orzo is done (about 15 min.)
2. Remove orzo from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.

Yield: 4 servings

Happy 2 weeks babies!!

The girls are doing really good. Ella is still holding down the fort in NICU3 . Hoping to start feeds up again soon. Her apnea is improving and she has had no episodes today!! Preslyn is receiving some occupational therapy to learn to suck, swallow and breathe all at the same time. She is trying really hard on the bottle, but just needs a little coordination 🙂 She is creeping her way toward 4lbs. but isn’t quite there yet. Once she gets to 4lbs. 6 oz. she can move to an open crib!!

Well I pray you all have a very wonderful Thanksgiving. I know that I have so much to be thankful for this year especially.

Here’s a quick and easy recipe that is so yummy you may want to make two or three of them 🙂

Mystic Pie

You will need:
1 cup sugar
1 tsp. vanilla
16 ritz crackers
1 c. pecans, chopped
3 egg whites
Cool Whip Topping

Preheat oven to 300. Combine chopped nuts and crackers, which have been finely crumbled (use a rolling pin). Beat egg whites stiff; add sugar. Fold into nut mixture; add vanilla. Pour mixture into 9 inch baking pan and bake 45 minutes or until golden brown. This looks like meringue. Cool and refrigerate for at least 2 hours before topping with Cool Whip.

Its DELICIOUS 🙂
