Dinner a la Hayden

Shrimp Scampi

Yield : Makes 4 servings
Ingredients :

1 pound peeled, large raw shrimp (31/35 count) (we bought a little 6 oz. pack of baby shrimp)
1 (12-oz.) package angel hair pasta
1/2 cup butter
1/4 cup finely chopped onion
3 garlic cloves, finely chopped
1 teaspoon salt-free Italian-herb seasoning
1 teaspoon Worcestershire sauce
1 tablespoon fresh lemon juice
1/4 cup freshly grated Romano or Parmesan cheese
1 tablespoon chopped fresh parsley
OPTIONAL: we added 1 14 oz. can of italian diced tomatos w/seasonings

Preparation
1. Devein shrimp, if desired.
2. Prepare angel hair pasta according to package directions.
3. Meanwhile, melt butter in a large skillet over medium-high heat; add onion and garlic, and sauté 3 to 5 minutes or until tender. Stir in Italian-herb seasoning and Worcestershire sauce.
4. Reduce heat to medium. Add shrimp, and cook, stirring occasionally, 3 to 5 minutes or just until shrimp turn pink. Stir in lemon juice. OPTIONAL: add diced tomatos. Toss shrimp mixture with pasta, and sprinkle with cheese and parsley. Serve immediately.

It’s delicious. We served it with a salad and garden medley v-8 soup on the side. SO YUMMY!

May Mayhem

Every year when May rolls around I kind-of cringe inside. May is a doozie of a month for our family, and I’m sure others too. For instance I went and bought cards the other day for all of the birthday’s that we celebrate in may (BIL’s fiance, my dad, bj’s dad, bj, misti, jordan–ah and don’t forget that when you have kids they give cards to people too 😉 ) then there is mother’s day for all the mom’s, plus any graduations and weddings that have snuck in this year. It was quite the pile when I was finished.

So needless to say this month is a fun month and crazy busy. This year happens to be the big 5-0 for my dad, bj’s dad and my sis-in-law’s dad. Pretty crazy that they were all born in the same year, same month and just days apart!

We had a little suprise party for BJ on Thursday night with some friends. It was really nice to get to see everyone and hang out for a bit! Plus how can you deny a yummy meal at Berryhill???

Then Sunday my little family all went to church and celebrated Mother’s Day for lunch at Eggcetera. Delicious! The lunch was a little stressful with it being near lunch time and Hayden has not been feeling very well. I got an array of gifts, a super cute shirt and earrings, some lawn gear (gloves, pots and a shovel), a cute rug, and a couple other clothing items. Such fun things and what great tastes my little Hayden has!

Then my brother and I took my parents out to dinner, along with Alexis, to celebrate my Mom’s mother’s day. Yummy Pappasitos! I ate way too much food this weekend that is for sure! We had a great time together.

And the Grammy goes to….

The other night we were watching American Idol and they were about to introduce Jamie Foxx. In his introduction Ryan Seacrest stated that he has five grammy’s, at which Hayden shouted out…

“HE HAS FIVE GRAMMY’S?????????!!!!!!”

Her face was in such confusion and her mouth wide open in exasperation. And BJ and I, as usual were in tears laughing. That was a great way to end a hard week of work, one another for the book ‘o Hayden 😉 Love that girl!

Race for the Cure Blog Style!!!

Ok so I just got an idea….what if this year, for the Komen Houston Race for the Cure, we have a BLOG team??? Anyone who blogs or reads these blogs can join..husbands, children, everyone included. I think it would be really fun and we could come up with a cutesy name and get tshirts made??? What do you think….. Its October 3, in the morning for about an hour. We have plenty of time to start raising money and maybe we can win a team prize.

Healings

The other day Hayden came up to me with her juice box and wanted me to try it. It was a new kind that we had just gotten as a sample and she really liked it. So, I take a sip out of the straw and she gasps…

Hayden: “Oh no Mom, we’ve been sick, now we are going to get sick again.”

Me: “No, Hayden we aren’t sick anymore. We’ve been healed.”

Long pause………………………………….

Hayden: “By Santa Clause.”

My little toddlers

Yesterday was the babies’ 18month checkup. I had every intention of taking my camera and taking pics with the pedi, and I totally forgot it at home. Anyway, they were so well behaved and the pediatrician said her exam with Preslyn was probably the most laid back 18month checkup she had ever done. That’s Pres for ya! She is so chill all the time. They were doing all the things they should be doing…identifying a few body parts, saying 4-5 words, understanding what we say to them, walking. So I was relieved about that. Having preemies is so nerve-wracking sometimes with keeping up with development. I’m glad to know they are keeping up.

The only thing we will be working on is getting miss P to wear some solid shoes to force her to stop walking on her little tiptoes. Its not too bad so the Dr. wasn’t worried, but we don’t want her to get in a bad habit of it and stiffen her ankles.

They both had to get 2 shots in their sweet little legs. Poor things. They fell asleep when they got home at 5 and slept through the night. Dr visits wear them flat out.
